I think you might be wrong about different W/R rating. As far as I know, both the hesalite and sapphire version of Speedmaster Professional have 50 m WR. And even though it's not very smart, dipping my sapphire version in the ocean confirmed that. However, if they would make 3570.50 (modern Speedmaster professional) with typical stainless steel caseback, BUT sapphire crystal, I would have difficulties to decide. But I would probably still pick the original, 3570.50.
3572.50: "Omega-Speedmaster-Professional-First Watch-Worn On-The Moon" And one other difference is that the earlier 3592.50 required a spacer to hold the movement in place whereas the later 3572.50 utilized a taller movement ring allowing the display back to sit flush without need for the spacer.
It depends on what you mean by the watch. If the 35705000 is a recently made watch, the watch head (case, movements, dial, hands) will be the same as the 31130423001005. The bracelet is different between the two models you list though.

I decided to have a look on craigslist first and found a very clean 3572.50 for 00 less (00 for those playing along at home). Pick up a nice 3572.50 hesalite/sapphire and have the best of both worlds. Not to give you "short shrift" but this question has been asked (and polled) any number of times. Just do a forum search and then buy whichever "sings" to you. All three are great watches.
